Want to prep ahead? Great! This is a very prep-ahead friendly dish (and the flavors evolve over time so leftovers are awesome too). You can prepare the beef mixture up to 2 days in advance and refrigerate until ready to serve.
Reheat in a saucepan over medium heat, adding a little more tomato sauce or water if necessary to thin out the mixture.

Want to substitute poultry for beef? No problem. Substitute an equal amount of lean ground turkey or ground chicken for the beef.

Step 1. Cook the beef in a large skillet over medium-high heat, breaking up the meat as it cooks. When the meat is browned all over, add the chili powder, cumin, oregano, onion powder, garlic powder, salt, and black pepper.
Stir to coat. Cook for 1 minute, until the spices are fragrant.
Step 2. Add the tomato sauce, ketchup and mustard and bring to a simmer.
Step 3. Reduce the heat to low and simmer for 5 minutes, adding more tomato sauce if your mixture seems too thick.
Step 4. Stir in the corn.
Step 5. Cook for 2 to 3 minutes to heat the corn.
Step 6. Spoon the mixture onto the rolls and serve.
