Broth on the other hand is just like Stock, the difference is broths are basically soups that contain whole meats of beef, pork, poultry, or fish as well as an assortment of spices and vegetables to make a flavorful and thick liquid that you can drink or use as a base for another dish.

What Is Fish Stock

Fish stock is basically the liquid that has been sifted out from the simmered bones of non-fatty fish. Most fish stocks are made out of halibut or any other fish that aren’t rich in fat.

Since fish stock is usually made with protein rich fish, it tends to be clear and has a light consistency with a pronounced fish flavor.

If you were to make a fish bouillabaisse for example, you may need to use fish stock made with fish that comes with a lot of protein since protein rich fish produce a gelatin like substance that makes for a great fish bouillabaisse.

If you ever run out of fish stock for your seafood dish, don’t fret just yet. There are simple alternatives you can use to add a distinct seafood flavor to your dish. One of which requires the use of clam juice.

To make yourself a decent fish broth substitute, simply go to your local grocery store or market, and get your hands on a couple of canned or bottled clam juice or clam broth.

Once you get your hands on some clam juice, all you need to do is cook it in an uncovered pot and wait for it to get reduced until ¼ of it has completely evaporated.

After you reduce your clam broth or clam juice, you will be left with a flavorful liquid that is very light, but is packed with a strong seafood taste.

You don’t always need to use fish to make a flavorful stock for your seafood dishes and sauces. You can also use other sea creatures including shrimp, crab, mussels, and other shellfish that are usually found in the grocery store or fish market.

Don’t worry if you haven’t made a seafood stock with shellfish before, the procedure is very similar to how other stocks are made.

The only difference is that you will have to thoroughly clean shellfish before you add them to your stock since most shellfish are sea-bottom dwellers that often come with different sorts of debris attached to them.

When making stocks at home, you may want to add a bit of complexity to your simple stock recipe by adding a dash of wine to it. Adding wine to your stock can add a sense of acidity as well as a deep alcoholic flavor that will also enhance the taste of your other ingredients.

When making a seafood stock, you may want to go with white wine for a clear color and a crisp taste. Another thing you should also keep in mind is that you should always go with wine that you would actually like to drink.
